Shepherd's Pie

Shepherd's Pie is not one of those recipes I grew up eating, but wish I would have!! This is a mix of all of my favorite things together in casserole form. Nick introduced me to this delicious dish when he requested I make it for his grandpa. I searched high and low for a recipe and went with my personal cooking role model, The Pioneer Woman. I mixed this recipe up a little and gracious, it was delicious!

For this recipe you will need: 1lb of ground beef, 2 lbs of red, Yukon, or russet potatoes, beef stock, butter, thyme, garlic cloves, frozen mixed veggies, heavy cream, cheddar cheese, flour, salt and pepper.

Start by boiling potatoes for the mashed potato mixture.

In a skillet, brown ground beef

Once beef is browned, add in yellow onion and...

..shredded carrots

Once onion and carrots are soft. Add in frozen mixed veggies

Now add in butter and...

...flour

then add in some fresh thyme

and minced garlic

and the last ingredient for the meat mixture is beef broth. Once the sauce has thickened, transfer into a baking dish

Now it's time to turn your attention to the potatoes. Add in the butter...

...and CHEESE and heavy cream and salt and pepper to taste

Mix until creamy and DELICIOUS! Spread mashed potatoes on top of the meat mixture. Bake at 425 degrees for 20 to 25 minutes.

Taco Hummus

Have you been in search of a healthy and delicious snack? Whenever I am on my healthy eating kicks, I am always looking for a savory snack. Hummus is a great go-to! This Taco Hummus packs delicious flavor and served with vegetables provides great nutrients!

For this recipe you will need: 16 oz can garbanzo beans, taco seasoning, minced garlic, olive oil and your favorite hot sauce.

Start by draining liquid from can of garbanzo beans into a separate container. Place garbanzo beans into food processor or blender.

Add in 1/4 cup olive oil.

Add 2 tbsp of taco seasoning 
Picture
Add 8-10 dashes of hot sauce (or whatever your desired level of heat is). Also, add in minced garlic.

Pulse in food processor.

Add in liquid reserved from chickpea can until desired consistency is achieved.

Serve with carrots, cucumbers, pita chips or crackers.
