Easy Marinara Sauce

I've always thought that making a tomato sauce or marinara sauce would be difficult! Thankfully, this recipe could not be easier! It's so easy to make, just throw everything in and ENJOY! Best of all, it's delicious! It tastes like it's been simmering on the stove all day, when it's only simmers for 20-25 minutes!

The ingredients you will need are honestly things you should have in your pantry already! You will need: olive oil, 2 large cans of crushed tomatoes (or diced tomatoes if you're me), minced garlic, salt, pepper, dried basil and dried oregano.

Start by heating olive oil in a medium pot over medium heat.

Add in your garlic, my theory on garlic is: the more, the merrier!

Add in crushed tomatoes

I like to add a little water to the can to get the leftover bits out. I would say no more than 1/4 cup of water.

Because I only had diced tomatoes for my second can of tomatoes, I added in a 1 tbsp of tomato paste to thicken it up a bit.

Don't forget your seasoning! Add in salt and....

Add in basil and...

Simmer for 20-25 minutes and ENJOY! Freeze leftovers in soup containers!

Cheddar Cheese Crackers

A couple of weeks ago I was watching The Food Network when I saw Valerie Bertinelli making these delicious cheddar cheese crackers & I immediately decided I was going to make them! Let me tell you...I was not disappointed. Just looking at these pictures now, my mouth is watering. They are so easy to make, just use a food processor, roll it out, cut it up, bake and voila!

This recipe is SIMPLE. All you need is flour, shredded cheddar cheese (I prefer to shred my own for this recipe. I think it makes it much more creamy), a stick of butter, salt, paprika and a little cayenne.

In a food processor, add in flour

add in cheddar cheese, I prefer to shred my own for this since it's creamier!

Add in your spices too: paprika, cayenne and salt. Pulse it together until combined.

Next you'll add in the 4 Tbsp of butter. I prefer to cut mine into 4 cubes per tbsp so it distributes fairly evenly. Pulse together until incorporated.

Last ingredient to go in is the heavy cream. Pulse until a ball of dough forms.

On a clean, floured surface, turn out your dough and roll it out to 1/4 inch and create strips to cut into squares or rectangles.

Once you get the squares on your sheet pan, be sure to poke holes with a fork. It helps the crackers to not puff as much in the middle.

Mix together equal parts paprika and salt. Sprinkle over the squares generously.

Bake at 400 degrees for 10-12 minutes or until puffed and slightly golden. Let cool and ENJOY!

Crockpot Turkey Breast

Around Easter I decided I would try my hand at making a Turkey Breast. I quickly realized I did not have a roasting pan and was honestly kind of afraid to make it. Instead, I decided to look for recipes that would use a crockpot. When I landed on this one I seemed perfect! The big question was "will it actually fit in the crockpot?!" Thank GOODNESS it did (just barely)! This make for the most moist and savory turkey and GREAT for sandwiches to get you through the week!

This recipe is soooo simple! All you will need is olive oil, pepper, seasoning salt, paprika, Italian seasoning and my personal favorite garlic powder. Oh and of course, a turkey breast. Mine was about 8 lbs, but I definitely could've gone for a smaller one closer to 6 lbs. This one made LOTS of slices!

This spice mixture is EASY! 1 tsp of each spice and mix together!

Add in a 1/2 cup of water

Coat the turkey breast in about 1 tbsp of olive oil and the seasoning mix. Be sure to get it on all sides. Cook on low for about 6 hours. I ended up cooking it on high or 1 hour and low for 5.5 hours. But low for 6 hours should be plenty!

After 6 hours and a carve later this is the delicious result! Let rest for about 10-15 minutes before carving too. ENJOY!

Banana Bread

What is one thing everyone is making during this quarantine? Banana Bread! I am, of course, no exception. However, this recipe is such a healthy twist! It makes for a super moist and delicious bread!

This recipe has quite a few ingredients, but most are baking staples! You will need: egg whites, 4 ripe bananas, unsweetened applesauce, ground nutmeg, honey, cinnamon, ground ginger, milk chocolate chips, coconut oil, chopped walnuts, whole wheat flour, baking powder and baking soda.

Start by preheating the oven to 350 degrees and grease your loaf pan.

Peel and mash the ripe bananas

Melt coconut oil and let cool a bit. Then add to mashed bananas

Add honey

and applesauce

and egg whites

In a separate bowl, mix together flour

cinnamon

nutmeg

and ground ginger

combine both mixes together then fold in walnuts and chocolate chips

Bake at 350 degrees for 40-45 minutes. Let cool for 30 minutes or so then ENJOY!

Mashed Cauliflower

One of the most hated vegetables by kids has gotten itself a really great publicist! Cauliflower is one of the most versatile vegetables and essentially takes on any flavor you give to it! 

This particular recipe for mashed cauliflower is soooo good! And much lighter than your traditional mashed potatoes. It is a great way to sneak veggies into your kid's dinner!

You'll need the following ingredients: one head of cauliflower, garlic, heavy whipping cream, grated cheddar, butter, salt, pepper and mozzarella cheese.

Start by cutting your cauliflower into florets. Then bring to a boil and let cook for about 20 minutes.

Now, I'm not going to lie. I read the recipe like 10 times making sure this was correct, but it does work! Place two WHOLE garlic cloves in with the cauliflower to be boiled.

Once the cauliflower is tender enough (think potato fork-tender) drain the water.

Place your butter in the pot

Add in milk

Add in grated parmesan

Salt & Pepper

Blend together with an immersion blender or using a traditional blender and do in batches

Make this extra cheesy by adding in some shredded parmesan

Finish it off with dried (or fresh) parsley

Banana Oatmeal Muffins

I don't know about you, but when God was giving out a sweet tooth, I think I got two! I love desserts and sweet stuff, but sometimes I try to get creative and lighten it up. These banana oatmeal muffins are PERFECT! They combine some of my favorite things & are soooo easy to make!

The ingredients you will need are: bananas, old fashioned oatmeal, almond milk (I prefer unsweetened vanilla), honey, 2 eggs, baking soda and vanilla extract.

Start by pureeing 3 bananas.

Add in milk

1 tsp baking soda

1 tsp vanilla extract

honey

puree it all together (you can always use a blender for this)

Before pouring into cupcake liners, mix in chocolate chips

Tzatziki Sauce

Lately, I have been trying to make better food choices (and hopefully sticking to it!). Something I am loving is bowls from a restaurant named CAVA. If you have never been to CAVA I like to describe it as a mediterranean Chipotle. Tzatziki sauce is a STAPLE in mediterranean cooking and it's such a healthy choice. Here's how to make this extremely easy sauce.

The ingredients you will need are: fresh dill, a clove of garlic, one cucumber, plain greek yogurt, red wine vinegar and olive oil.

Shepherd's Pie

Shepherd's Pie is not one of those recipes I grew up eating, but wish I would have!! This is a mix of all of my favorite things together in casserole form. Nick introduced me to this delicious dish when he requested I make it for his grandpa. I searched high and low for a recipe and went with my personal cooking role model, The Pioneer Woman. I mixed this recipe up a little and gracious, it was delicious!

For this recipe you will need: 1lb of ground beef, 2 lbs of red, Yukon, or russet potatoes, beef stock, butter, thyme, garlic cloves, frozen mixed veggies, heavy cream, cheddar cheese, flour, salt and pepper.

Start by boiling potatoes for the mashed potato mixture.

In a skillet, brown ground beef

Once beef is browned, add in yellow onion and...

..shredded carrots

Once onion and carrots are soft. Add in frozen mixed veggies

Now add in butter and...

then add in some fresh thyme

and minced garlic

and the last ingredient for the meat mixture is beef broth. Once the sauce has thickened, transfer into a baking dish

Now it's time to turn your attention to the potatoes. Add in the butter...

...and CHEESE and heavy cream and salt and pepper to taste

Mix until creamy and DELICIOUS! Spread mashed potatoes on top of the meat mixture. Bake at 425 degrees for 20 to 25 minutes.

Taco Hummus

Have you been in search of a healthy and delicious snack? Whenever I am on my healthy eating kicks, I am always looking for a savory snack. Hummus is a great go-to! This Taco Hummus packs delicious flavor and served with vegetables provides great nutrients!

For this recipe you will need: 16 oz can garbanzo beans, taco seasoning, minced garlic, olive oil and your favorite hot sauce.

Start by draining liquid from can of garbanzo beans into a separate container. Place garbanzo beans into food processor or blender.

Add in 1/4 cup olive oil.

Add 2 tbsp of taco seasoning 
Picture
Add 8-10 dashes of hot sauce (or whatever your desired level of heat is). Also, add in minced garlic.

Pulse in food processor.

Add in liquid reserved from chickpea can until desired consistency is achieved.

Serve with carrots, cucumbers, pita chips or crackers.

Pound Cake

One of the recipes my Nana marked in her cookbooks, was this Pound Cake recipe. It says "Good, the best ever." Now looking through this cookbook there are literally 10 different recipes for pound cake. So I decided to give this one a try. It is deliciously simple! A perfect, no frills, lemon and vanilla pound cake.

The ingredients you will need are sugar, 2 sticks of butter, cake flour, canola oil, milk, lemon juice and zest, vanilla extract, baking powder and 5 eggs.

Start with two sticks of butter

Add in 1/2 cup of canola oil

Cream together the first two ingredients with 3 cups of sugar (yes, that is a lot!)

Now add in all 5 eggs, one at a time, letting each egg incorporate into the batter

Next add in 3 1/3 cups of cake flour (yes, also a lot)

Add in 1/2 tsp of baking powder
Picture
And 1 cup milk

Now your vanilla

and lemon zest and juice
Picture
Now that your batter is done, pour batter into greased and floured bundt pan

Bake at 350 degrees for 1 hour and 15 minutes. Let cake cool completely before dropping out of the pan.
