Mashed Cauliflower

One of the most hated vegetables by kids has gotten itself a really great publicist! Cauliflower is one of the most versatile vegetables and essentially takes on any flavor you give to it! 

This particular recipe for mashed cauliflower is soooo good! And much lighter than your traditional mashed potatoes. It is a great way to sneak veggies into your kid's dinner!

You'll need the following ingredients: one head of cauliflower, garlic, heavy whipping cream, grated cheddar, butter, salt, pepper and mozzarella cheese.

Start by cutting your cauliflower into florets. Then bring to a boil and let cook for about 20 minutes.

Now, I'm not going to lie. I read the recipe like 10 times making sure this was correct, but it does work! Place two WHOLE garlic cloves in with the cauliflower to be boiled.

Once the cauliflower is tender enough (think potato fork-tender) drain the water.

Place your butter in the pot

Add in milk
Picture
Add in grated parmesan

Salt & Pepper

Blend together with an immersion blender or using a traditional blender and do in batches

Make this extra cheesy by adding in some shredded parmesan

Finish it off with dried (or fresh) parsley
